Our Pastry Creations and The Economic Stimulus Packages at the restaurants

Just over a year ago now we were joined by a wonderful pastry chef, Brian Victor. It's about time we introduced him to you as you may wonder who oversees all our desserts, breads and pastries. Brian's schedule is late night, early morning and definitely more hours in between. Many weeks he's there every day. Our production kitchen, on 5th Street, is where all the restaurant's desserts, the ciabatta bread , the English muffins for Jimmy Bean's breakfast, the sandwich bread, hamburger rolls (all sizes), long buns, wheat bread and whole grain for toast, morning croissants, Danishes, muffins, scones, zucchini bread, cheesecake, pecan tart, etc. etc. etc. are prepared.
It's a beautiful thing to walk into the 5th street kitchen and smell the aromas; toasted flour and cornmeal cooking on the griddle for the muffins, buttery croissants and chocolate squares baking, caramel sugar warming from the sugar pulling station and the smell of fresh warm ciabatta coming from the oven. Everyone tries to be on task to meet their deadlines and Brian oversees them all to make sure that they go out "perfectly" and on time. Thank you Brian for all your dedicated hours. On some of those days that are more difficult than others, thank you for making the wonderful smell of ciabatta waft towards us.
